Matcha is complex in flavour and not all are the same. It tastes different compared to the region it is grown and the cultivator. We have been getting small batch shipments monthly from Japan for the last decade of single cultivator, organic and ceremonial grade matcha. If you are after a delicious tasting and vibrant matcha we have lots of high quality options to choose from. From Australian made (coming soon) to Ceremonial Uji and Yame matcha.
How to prepare your matcha
Everyone has a favourite way of making matcha. From traditionally whisked to an iced or hot matcha latte to even cooking with it to add extra health benefits. Matcha is so versatile and brimming full of antioxidant properties.

Picking the leaf
EXTRACTION PROCESS
Exceptional quality matcha comes from the shading of the leaves before harvest in Japan. Tencha is shaded, twenty to forty days before harvesting, producing high amounts of chlorophyll, increasing concentration of nutrients in the leaf and a smooth umami taste. Matcha is created by then slowly milling the tencha leaves with precision with a traditional stone mill (ISHI-USU (石臼) You will be able to see this process in our Petersham Matcha Specialty shop soon to open. It takes 1 hour to make 40g of matcha. The process takes time as not to burn the leaves and allows a deeper reflection into taking things slow and with meaning.

Tea > Matcha
GRINDING PROCESS
Matcha is delicate and ground finer than flour or coffee. 5 microns compared to 250. The second you grind matcha it starts to break down. Stone milling fresh to order in Sydney makes sure you get the freshest matcha in the market with the highest nutritional load. You wouldn’t want to enjoy six month old coffee that is ground overseas, would you? Bringing the highest quality tencha tea leaves from Japan and grinding it to order will give you the best tasting ceremonial matcha you can find in Australia. Through the contacts we have made over the last ten years in woking with matcha, we were able to visit where our matcha mill was made in Japan and import the first mill into Australia. You will be able to see the mill and the process of how matcha is made in our dedicated matcha specialty shop & cafe soon to open in the Inner West of Sydney in Petersham. To provide Australia with the freshest matcha in the market; tencha tea leaves from pristine tea fields in Japan that is ground by us in Petersham, Sydney in our specialty matcha shop & cafe using a traditional stone mill (ISHI-USU (石臼)). We are a husband and wife team who have been working with matcha for over a decade in Australia. It has been our vision to open up a Matcha Speciality Shop & Cafe for years and we finally found the perfect place next to beautiful Petersham Park. You will be able to experience all of our viral drinks (strawberry matcha , French Earl Grey Matcha ect ) we currently sell in our Sydney city store, taste the difference between single cultivator matcha and try and see the first Australian ground matcha being made. We also will be serving delicious matcha desserts to pair with your drink.
